Earlier in the week I talked about “meal morphing” in my FB group and these recipes are an awesome example of this – plus, as a bonus the first one can use the crock-pot!

Both recipes come from Robin Miller and can be found in her cookbook “Quick Fix Meals”.   Recipe number one is for Sweet & Tangy Beef Roast with Vegetables and can be made either in the crockpot or on the stove in a dutch oven (I used the crockpot).  The second recipe is for French Dip Sandwiches and was perfect for one of our busy weeknight meals.

Next time I make the roast I’ll use traditional veggies instead of the root ones she uses because my kids enjoy those more, but it was a nice change of pace to try them.

The version in her book uses the dutch oven method, and the ingredients only differ by adding 1 Tbs. cider vinegar, and using 1 Tbsp. of the chili powder (instead of 2 tsp).  I personally love the sweet & tangy flavor so I highly recommend this if you do as well!

The second recipe comes together super quickly and just needs a healthy side dish to complete the meal:

French Dip Sandwiches (pg. 93 in Quick Fix Meals)

1 c. reduced-sodium beef broth  
1 tsp. Worcestershire sauce  
12 tsp. garlic powder  
2 sprigs fresh rosemary  
2-3 c. leftover sliced roast beef  
4 kaiser rolls  (try using baked potatoes if you’re going gluten free)

DIRECTIONS

In a medium saucepan, combine broth, worcestershire, garlic powder & rosemary sprigs, set pan over medium heat and bring to a simmer. Add beef and simmer 5 minutes to heat through.

Using a large fork or tongs, place the beef on the rolls. Serve with the remaining broth mixture on the side in small individual bowls for dunking.

Not called for in the recipe, but I enjoyed, was to add large slices of bell peppers in the broth as it was heating through (in full honesty, it’s not as good as an italian beef from portillo’s, but still got thumbs ups and YUMS!).
