Today I’m sharing a couple of recipes where you make one meal  that can be made and enjoyed as is, with leftovers saved or frozen and then used in another meal.  This concept is something I call “Meal Morphing” and is a great time saver as well as helps with planning & staying w/in a grocery budget.

Start by making Slow Cooker Salsa Verde Beef Tacos (recipe from Picky Palate).  Enjoy the taco dinner – they’re delicious!

For the second meal (to be made on a different night) I incorporate the leftover meat into Baked Taquitos. This a super quick to make meal, and while the recipe actually doesn’t call for meat (which my daughter loves, but my son hates), I make some of each and they’re both happy!  The recipe also calls for a store bought spice mix to add to the refried beans, but if you prefer to make your own, I highly recommend using this Best Ever Taco Seasoning recipe.
