Today I’m sharing two recipes from our menu this week.  Click on the links below for the original recipes, and I’ve listed the modifications I made as well.  

Easy slow cooker minestrone – This is a great crockpot recipe.  Since I served it with a sandwich I left out the noodles.  This also makes it easier to freeze the leftovers for another meal without worrying about mushy noodles.

Baked Deli Focaccia – This delicious sandwich got a few makeovers.  I left off the cheese and added some roasted red peppers and artichoke hearts.  Since this was a side we were able to use some of the leftovers for the kids lunches the next day.  Be sure to look for low sodium deli meat.

My kids both had activities that night so I pre-prepped the sandwich while the kids were doing homework, then later while the sandwich was baking, made a quick salad & dinner was good to go.

All in all this was a great meal that everyone enjoyed and took minimal time to throw together.
